Plum Frangipane Tarts

These quick and simple pastries are the perfect way to enjoy that juicy summer stone fruit!
Servings 8 tarts

Ingredients

  • 1 1 pound box frozen puff pastry thawed and chilled
  • 1/2 cup roasted unsalted almonds
  • 1/4 cup granulated sugar
  • 4 tablespoons Vital Farms Unsalted Butter room temperature
  • 1/2 teaspoon almond extract
  • 2 Vital Farms eggs room temperature
  • 1 tablespoon all-purpose flour
  • pinch of salt
  • 2 medium plums halved, pitted, and sliced into 1/4-inch slices

Instructions

  • Preheat the oven to 400°F. Line a rimmed baking sheet with parchment and set aside.
  • Make the frangipane by adding the almonds and sugar to a food processor and pulsing until it’s very finely ground. Add in the butter and whip until mixture is well combined and fluffy.
  • Scrape the sides of the food processor down and add the almond extract, 1 egg, flour, and salt and pulse again to combine.
  • Unroll the sheets of puff pastry and cut each sheet into 4 even squares. Place them on the baking sheet about an inch apart.
  • Add about 1 tablespoon of the almond frangipane to the center of each pastry square and spread over the square, leaving about a 1/2-inch border around all sides.
  • Beat the remaining egg in a small bowl and brush the borders of the pastry squares.
  • Arrange about 6-8 plum slices on top of the frangipane of each square.
  • Bake for about 20 minutes, until the squares are puffed and golden-brown.

Nairn Family Farms’ Zucchini Cake

In addition to raising hens, Troy and Carol, of Nairn Family Farms, are gardening gurus, planting everything from corn and beans to a rainbow of fresh fruits and veggies. With such a plentiful harvest, it only makes sense that they have some tasty recipes up their sleeves. Lucky for us, Carol shared one of her favorite recipes for Zucchini Cake, and it's delightful!
Servings 1 9×13-inch cake

Ingredients

For the bread:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3 teaspoons ground cinnamon
  • 3 Vital Farms eggs
  • 1 cup oil
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla extract
  • 2 cups zucchini, shredded

For the frosting:

  • 1/2 cup cream cheese
  • 1/4 cup Vital Farms unsalted butter (room temperature)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk

Instructions

  • Preheat oven to 350°F. Grease a 9×13-inch baking pan and set aside.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, salt and cinnamon.
  • In a large bowl, whisk together the eggs, oil, sugar, and vanilla extract.
  • Add the dry ingredients into the wet and whisk to combine. Add the zucchini and fold to combine.
  • Transfer mixture to the baking pan and bake for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool completely before frosting.
  • To make the frosting, add the cream cheese and butter to a large bowl and use a hand mixer to beat until smooth. Add in the powdered sugar and mix on low to combine. Add in the vanilla and milk, increase speed to medium and beat until fluffy and well incorporated, about a minute or so.
  • Transfer to finished cake and smooth frosting over the entire surface. Slice up and enjoy!

Caramelized Onion, Rosemary and Thyme Compound Butter

A delicious way to finish grilled steaks, sautéed mushrooms, and creamy mashed potatoes. Or, simply slater it onto toasty bread.

Ingredients

  • 1 cup plus 2 tablespoons Vital Farms Salted Butter, room temperature
  • 1 tablespoon olive oil
  • 1 medium yellow or white onion, finely chopped
  • kosher salt
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped

Instructions

  • Heat a medium skillet over medium-low heat.
  • Add 2 tablespoons of butter and the olive oil to the skillet and allow the butter to melt. Then, add in the onions. Season with salt and cook, stirring occasionally, until onions are caramelized and jammy, about 30-40 minutes.
  • Transfer to a medium bowl to cool completely.
  • Add the remaining cup of butter and herbs to the bowl, along with the onions. Using a fork, wooden spoon, or rubber spatula, mash mixture together until fully incorporated.
  • Transfer mixture to a piece of parchment or wax paper and shape into a rough log. Roll it up and twist both ends tightly to compact the mixture.

Rosemary Cheddar Crackers

Don't be intimidated by homemade crackers! These salty snacks come together quickly with the help of a food processor. So join us in making the fresh, homemade version of the cheese crackers everyone knows and loves—leveled up with grass-fed butter and rosemary.
Servings 200 crackers

Ingredients

  • 4 tablespoons Vital Farms unsalted butter cut into 1/2-inch cubes
  • 8 ounces extra sharp cheddar cheese grated
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon fresh rosemary finely chopped
  • 1-2 tablespoons ice water

Instructions

  • In the bowl of a food processor, combine the butter, cheese, salt, flour, and rosemary and pulse until a crumbly dough forms. With the food processor running, drizzle in 1 tablespoon of water, adding the remaining tablespoon if needed until the dough just comes together.
  • Divide dough in half and wrap each in plastic wrap and flatten dough into discs. Refrigerate for an hour, until firm.
  • Preheat oven to 375°F. Line two rimmed baking sheets with parchment and set aside.
  • Working with one disc of dough at a time, roll out into a thin rectangle, about 1/8th of an inch thick. Using a ruler or something with a straight edge and a pizza cutter or knife, cut rectangle into a grid of 1-inch squares. Transfer squares to baking sheets, leaving a little space in between.
  • Use a skewer or toothpick, poke a hole in the center of each. Repeat with the second disc of dough. Bake crackers for about 12-15 minutes, until crisp and golden around the edges. Transfer to an airtight container.

Homemade Ghee

Love ghee? Making your own is surprisingly simple! All you need is four sticks of our grass-fed butter and a little time and patience. What would you make with this tasty, homemade ghee?
Servings 1.5 cups ghee

Ingredients

  • 2 cups (4 sticks) Vital Farms Unsalted Butter

Instructions

  • Add the butter to a medium pot with high sides and heat over medium-low heat until the butter has melted and is slightly foamy. Use a spoon to skim the foam off the top several times as it rises to the surface.
  • Reduce heat to low and continue cooking until the milk solids have browned but not burned and have sunk to the bottom. Place a mesh strainer lined with a piece of cheesecloth or a coffee filter over a jar. Then pour in the ghee, being careful to leave the browned bits in the pan.
  • Let the jar cool completely before placing in the fridge. Ghee may be stored up to 1 month in the fridge.

Don’t toss the browned milk solids! Use them to add a nutty flavor to your pancakes or biscuits, a quick pasta sauce, or your morning scramble (no substitutions needed).

Roasted Rhubarb Honey Butter

Rhubarb is often welcomed as a strawberry sidekick, but it's equally comfortable flying solo! This Rhubarb honey butter is the perfect balance of sweet and tart. Spread it on everything from toast to biscuits and even your morning stack of pancakes.
Servings 1 cup

Ingredients

  • 1/2 cup Vital Farms Unsalted Butter (room temperature)
  • 1/2 pound rhubarb (washed and roughly chopped)
  • 1/4 cup honey
  • 1/4 teaspoon kosher salt

Instructions

  • Preheat oven to 400 F.
  • Combine rhubarb and honey in a baking dish and toss to combine.
  • Roast for 20 minutes, until tender.
  • Allow to cool then puree by pulsing in a food processor, blender or using an immersion blender.
  • Add butter, salt and puree to a stand mixer fitted with a whisk attachment and whip together until smooth and combined.
  • Spread on toast, biscuits, french toast, or pancakes!
